Vanilla beans are cured after harvest — a complex process: kill the beans, sweat them in blankets, then air-dry for several months until dark, pliable, and fragrant.
📦 Storage
Store whole beans in an airtight container at room temperature — do not refrigerate. Use within 2 years. Ground vanilla or extract keeps for 4+ years in a cool, dark place.
