Tropical perennial vine (Piper nigrum) — requires consistently warm temperatures (65–90°F) and high humidity. Grows on a trellis in rich, well-drained soil with partial shade. Suited to greenhouse or indoor growing in temperate climates. Harvest grape-like clusters when berries are green for green peppercorns, or when a few begin turning red for black peppercorns.
🌾 Drying & Preserving
For black peppercorns: harvest green berry clusters and spread on mesh screens in the sun for 3–5 days, turning daily, until berries shrivel and turn dark brown/black. Can also use a dehydrator at 95°F.
📦 Storage
Store whole peppercorns in an airtight jar in a cool, dark place for up to 3–4 years. Whole peppercorns hold their potency far longer than ground pepper. Grind fresh as needed.
